Vegan courgette boats recipe made with vegetables


(About 3 servings)

Courgettes - 2

Mixed vegetables - 1/4 red bell pepper, 1/4 yellow bell pepper, 8-10 small mushrooms, 1-2 slices of ginger

Soya mince - 10-15g (before soaked)

Vegan cheese - 2 tbsp

(recommended brand: Sheese, Violife)

Fresh rosemary - about 1/2 stick

Nutritional yeast - 1 tbsp

Salt and black pepper to taste

Olive oil - 1 tbsp (optional)

Vegan courgette boats recipe made with vegetables ingredients


1. Soak dried soya mince in warm water for up to 15 minutes, then drain it and squeeze excess water out of it;

2. Cut the courgettes in half lengthways, and use a spoon to scoop the light-coloured flesh out of the courgettes;

3. Chop vegetables into roughly the same size and mix them in a big bowl;

4. Add vegan cheese, rosemary (chopped), nutritional yeast, salt, black pepper, and olive oil (optional) into 3 and mix everything well with a spoon;

5. Preheat oven to 190 degree Celsius;

6. Fill the courgettes with the mixed and seasoned vegetables (sprinkle some more cheese on top if you like);

7. Bake for 20-25 minutes;
